Preheat your oven to 400°F (200°C).
Season the chicken breasts with salt and black pepper on both sides.
In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5 minutes on each side until golden brown.
In a small bowl, mix together the honey, red pepper flakes, and lemon juice.
Pour the honey mixture over the seared chicken breasts in the skillet.
Sprinkle the crumbled feta cheese on top of the chicken.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
Remove from the oven and let it rest for 5 minutes. Garnish with chopped parsley before serving.
