  • 2 medium heads of cauliflower cut into florets
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 2 tablespoons curry powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional, for heat
  • 2 tablespoons chopped fresh cilantro for garnish

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the olive oil, honey, curry powder, garlic powder, salt, black pepper, and cayenne pepper until well combined.
  3. Add the cauliflower florets to the bowl and toss them in the honey curry mixture until evenly coated.
  4. Spread the cauliflower in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through for even cooking.
  6. Remove from the oven and let cool for a few minutes. Garnish with chopped fresh cilantro before serving.
