In a large mixing bowl, combine the cottage cheese, shredded cheddar cheese, chopped spinach, diced bell peppers, diced tomatoes, and chopped onion. Stir until well mixed.
In a separate bowl, whisk together the eggs, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using). Pour the egg mixture into the vegetable mixture and stir until everything is evenly coated.
Pour the mixture into the prepared baking dish and spread it out evenly.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the center is set.
Allow to cool for 5-10 minutes before slicing and serving.
