Step-by-Step Instructions for Guacamole
  1. Finely chop the white onion and jalapeño or serrano chili on a cutting board. Sprinkle with salt and add half of the coriander leaves. Mash together to create a paste for 2-3 minutes.
  2. Transfer the paste into a mixing bowl and scoop in the ripe avocados. Mash to your desired consistency for 3-4 minutes.
  3. Taste and adjust the seasoning with more salt or lime juice as needed for a minute.
  4. If using, dice the tomato and fold it into the guacamole with a spatula for about 1 minute.
