Ingredients
  

  • 1 pound ground turkey
  • 1 medium onion diced
  • 2 bell peppers any color, diced
  • 2 cloves garlic minced
  • 1 teaspoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can 14.5 ounces diced tomatoes, drained
  • 1 cup corn fresh, frozen, or canned
  • 1/4 cup fresh parsley chopped (for garnish)

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground turkey. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
  4. Stir in the diced bell peppers, smoked paprika, oregano, salt, and black pepper. Cook for another 5 minutes until the peppers are tender.
  5. Add the drained diced tomatoes and corn to the skillet. Stir well and cook for an additional 3-4 minutes until heated through.
  6. Remove from heat and garnish with fresh parsley before serving.
