- Preheat your grill to medium-high heat.
- In a large bowl, combine the sliced zucchini, olive oil, garlic powder, salt, and black pepper. Toss until the zucchini is evenly coated.
- Place the zucchini slices directly on the grill grates. Grill for about 3-4 minutes on each side, or until they are tender and have nice grill marks.
- Once grilled, remove the zucchini from the grill and sprinkle with grated Parmesan cheese while still warm.
- If desired, garnish with fresh parsley before serving.
