Preparation
- Soak wooden skewers in water for at least 30 minutes to prevent burning.
- Preheat grill to medium-low heat, approximately 325°F (160°C).
- Prepare vegetables: shuck the corn, slice zucchini, chop red bell pepper and onion, and halve Brussels sprouts.
- Assemble the kabobs by threading the vegetables onto the skewers.
- In a saucepan, melt salted butter over low heat, then whisk in fajita seasoning mix and lemon juice.
- Grill skewers for about 15 minutes (metal) or 20 minutes (wood), rotating every 3-5 minutes while brushing with fajita butter.
- Serve warm, drizzled with extra fajita butter.
