  • 1 medium Red Onion Cut into 1.5-inch pieces.
  • 6 pieces Brussels Sprouts Trim and halve.
  • 8 ounces Mushrooms Whole or halved.
For the Fajita Butter Glaze
  • 1/2 cup Salted Butter Can substitute with olive oil for a dairy-free version.
  • 1 packet Old El Paso Fajita Seasoning Mix Enhances flavor profile.
  • 2 tablespoons Fresh Lemon Juice Can be substituted with lime juice.

Method
 

Preparation
  1. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. Preheat grill to medium-low heat, approximately 325°F (160°C).
  3. Prepare vegetables: shuck the corn, slice zucchini, chop red bell pepper and onion, and halve Brussels sprouts.
  4. Assemble the kabobs by threading the vegetables onto the skewers.
  5. In a saucepan, melt salted butter over low heat, then whisk in fajita seasoning mix and lemon juice.
  6. Grill skewers for about 15 minutes (metal) or 20 minutes (wood), rotating every 3-5 minutes while brushing with fajita butter.
  7. Serve warm, drizzled with extra fajita butter.
