Step-by-Step Instructions
  1. In a large mixing bowl, combine 1 cup of orange juice, 1/2 cup of grapefruit juice, 1/4 cup of lime juice, 1/4 cup of olive oil, 4 cloves of minced garlic, 1/2 finely chopped white onion, and a pinch of salt, pepper, 1 teaspoon of cumin, and 1 teaspoon of dried oregano. Whisk everything vigorously until well-blended.
  2. Take your whole cut-up chicken and place it in a resealable bag or baking dish. Pour 3/4 of the marinade over the chicken, ensuring even coating. Seal and refrigerate for 24 hours.
  3. Preheat your grill to 400°F, setting up for dual-zone cooking.
  4. Remove chicken from the marinade and place it skin-side up over indirect heat on the grill. Cook for about 20 minutes.
  5. Transfer chicken to direct heat and sear each side for about 3-5 minutes until golden brown, basting with reserved marinade.
  6. Insert a meat thermometer into the thickest part of the chicken, ensuring it reads at least 160°F. Remove and let rest for 10 minutes.
  7. Serve alongside Balsamic Tomato Salad, garnished with lime wedges or herbs if desired.
