Cooking Instructions
  1. Heat 2 tablespoons of avocado oil in a large skillet over medium heat until shimmering.
  2. Add 4 cloves of minced garlic and 1 tablespoon of freshly grated ginger, sauté for about 1-2 minutes until fragrant.
  3. Toss in 1 pound of fresh shrimp, seasoning with salt and pepper; cook for 3-4 minutes until pink and opaque.
  4. Add 2 cups of chopped bok choy, 1 sliced bell pepper, and 1 cup of thinly sliced carrots; stir and cook for 3-5 minutes.
  5. Drizzle in 2 tablespoons of low-sodium soy sauce and sprinkle with red pepper flakes; toss and cook for another minute.
  6. Remove from heat, serve immediately and garnish with sliced green onions and fresh herbs.
