Cook the penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes.
Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and smooth.
Add the cooked penne pasta and chopped spinach to the skillet, tossing to combine everything well. Cook for another 2-3 minutes until the spinach is wilted.
Remove from heat and garnish with fresh parsley before serving.
