Step-by-Step Instructions
- In a medium saucepan, combine 4 cups of filtered water, 1 cup of fresh mint leaves, and 1 cup of organic cane sugar. Bring to a boil over medium-high heat for 1–2 minutes; then reduce heat and simmer gently for 2–3 minutes, until sugar dissolves completely. Remove from heat, and allow syrup to cool for 30 minutes before discarding the mint leaves.
- In a high-powered blender, combine the cooled mint syrup, 1 tablespoon of freshly-squeezed lemon juice, 3 cups of fresh cubed watermelon, and 1 peeled and chopped organic cucumber. Blend on medium-high speed for about 2–3 minutes, or until the mixture is fully combined and smooth.
- If you prefer a smoother drink, pour the blended juice mixture through a fine-mesh strainer into a large pitcher. Extract as much juice as possible to enhance clarity and lightness.
- Pour your vibrant Fresh Watermelon Cucumber Mint Juice into tall glasses filled with ice. Consider refrigerating the juice for 1–2 hours before serving. Garnish with fresh basil leaves or watermelon chunks.
