Cook the rice noodles according to package instructions. Drain and rinse under cold water to cool. Set aside.
In a large bowl, combine the shredded cabbage, carrots, bell peppers, cucumber, cilantro, mint, and avocado.
In a separate bowl, whisk together all the ingredients for the spicy ginger dressing until well combined.
Add the cooled rice noodles to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients.
If using, sprinkle chopped peanuts on top before serving.
