For the Dressing
  • 1/4 cup extra virgin olive oil Use some for roasting the asparagus.
  • 1 whole lemon Zest and juice.
  • 1 tablespoon Dijon mustard Can substitute with honey mustard.
  • 1 small shallot or red onion Minced.
  • 1 tablespoon fresh herbs (dill, parsley, mint) Chopped.
  • to taste salt and freshly ground pepper Essential for seasoning.

Method
 

Preparation
  1. Wash the asparagus thoroughly under cool water. Trim the woody ends by snapping them off.
  2. If grilling, preheat your grill to medium-high heat. Toss with olive oil, salt, and pepper.
  3. Grill for 5-7 minutes or roast in a preheated oven at 400°F for 12-15 minutes.
  4. Alternatively, blanch in salted boiling water for 2-3 minutes, then transfer to an ice bath.
  5. Prepare the dressing by whisking together olive oil, lemon juice, mustard, shallots, salt, and pepper.
  6. Combine the cooked asparagus and drizzle with dressing. Toss gently to coat.
  7. Sprinkle crumbled feta and additional chopped herbs before serving.
