  • 2 whole English Cucumbers Diced
  • 1 teaspoon Salt To draw out moisture
  • 1 cup Yogurt Greek yogurt for thicker consistency
  • ½ cup Feta Cheese Crumbled, can be omitted
  • 2 tablespoons Fresh Herbs Dill, parsley, or chives
  • 1 whole Lemon Zest & Juice Or vinegar as a substitute
  • Pepper To taste
For the Sandwich Assembly
  • 4 slices Bread Toasted, whole grain, or gluten-free
  • Sprouts & Onion Optional, can substitute onion with avocado

Method
 

Preparation Steps
  1. Dicing 2 English cucumbers into small pieces, then place them in a colander and sprinkle with salt. Let sit for 10-15 minutes.
  2. In a mixing bowl, combine yogurt, crumbled feta cheese, finely chopped fresh herbs, lemon zest and juice, and freshly ground pepper.
  3. Rinse the cucumbers under cold water, and pat them dry with paper towels.
  4. Add the drained cucumber pieces to the yogurt mixture and fold gently.
  5. Take two slices of toasted bread, layer with sprouts, then spread the cucumber filling. Optionally add onion or avocado.
  6. Cut the sandwiches in half diagonally and serve immediately.
