- Prepare the strawberries by cleaning 2 cups under cool water, removing stems and slicing into halves or quarters. Blend with 1/4 cup sugar until smooth.
- Reserve 1/2 cup of the strawberry puree in a small bowl for layering.
- In a chilled bowl, whip 1 cup of heavy cream until stiff peaks form, about 3-5 minutes.
- Gently fold the remaining strawberry puree into the whipped cream.
- Layer 1/2 cup reserved strawberry puree at the bottom of serving glasses and spoon the mousse on top.
- Chill the mousse in the refrigerator for at least 1 hour.
- When ready to serve, top with fresh strawberries.
