In a large mixing bowl, combine the cottage cheese and eggs. Mix until well blended.
Add the flour, sugar, baking powder, vanilla extract, and salt to the bowl. Stir until just combined; the batter will be slightly lumpy.
Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for about 3-4 minutes, or until bubbles form on the surface and the edges look set.
Carefully flip the pancakes and cook for an additional 2-3 minutes, or until golden brown.
Remove from the skillet and keep warm while you cook the remaining batter.
Serve warm, dusted with powdered sugar and topped with fresh fruit or syrup if desired.
