  • 2 tablespoons Tomato Paste Can substitute with marinara
  • 1 teaspoon Smoked Paprika Reduce or omit for milder taste
  • 1 teaspoon Coriander Powder Cumin can be substituted
  • 1 teaspoon Cumin
  • 1 cup Breadcrumbs Oats or gluten-free breadcrumbs as alternatives
  • 1/4 cup Chopped Parsley Basil or thyme can be used
  • 1 tablespoon Olive Oil Brush lightly before baking

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C).
  2. In a food processor, combine chickpeas, red onion, garlic, nutritional yeast, soy sauce, and tomato paste. Pulse until smooth.
  3. Add smoked paprika, coriander powder, and cumin to the mixture and blend briefly.
  4. Transfer to a mixing bowl and fold in breadcrumbs and parsley until well combined.
  5. Shape the mixture into tablespoon-sized balls and place on a parchment-lined baking tray.
  6. Freeze the meatballs for about 15 minutes to help them firm up.
  7. Brush the meatballs with olive oil and bake for 20 minutes, flipping halfway through.
