Step-by-Step Instructions
  1. Prepare your corn by cutting kernels off fresh corn, draining canned corn, or thawing frozen corn.
  2. Blend 1 cup of sour cream, 1 cup of mayonnaise, and 8 ounces of softened cream cheese until smooth.
  3. Stir in 1 cup of shredded cheddar cheese and 1 cup of pepper jack cheese until well incorporated.
  4. Season the mixture with 1 teaspoon each of garlic powder, onion powder, smoked paprika, and chili powder, along with salt and black pepper to taste.
  5. Fold in the corn, ½ cup of green onions, ½ cup of red bell pepper, and optional jalapeño.
