  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add one chopped onion and sauté until translucent, about 5 minutes. Then, add ground beef, cooking until browned, approximately 7-10 minutes. Stir in tomato sauce and ground cinnamon; cover and let simmer on low for 30 minutes.
  2. Bring a large pot of salted water to a boil and add pastitsio noodles. Cook until al dente, about 8-10 minutes. Drain the noodles and let cool slightly. Mix the warm pasta with one beaten egg.
  3. In a medium saucepan, melt unsalted butter over low heat. Whisk in flour, cooking for 2 minutes until golden. Gradually pour in whole milk while whisking continuously. Cook until thickened, about 5-7 minutes. Off the heat, stir in two beaten eggs.
  4. Preheat your oven to 350°F (175°C). Grease a baking pan and start layering. Begin with half of the noodle mixture, followed by half of the meat sauce, and a layer of Kasseri cheese. Repeat with remaining noodles and meat sauce, topping with béchamel and melted butter.
