  • 1 finely chopped Onion Provides sweetness and depth; brown, white, or yellow onions work well.
  • 1 rib Celery Contributes crunch; can be omitted or substituted with diced carrots.

Method

Step-by-Step Instructions
  1. In a large skillet, heat 1 tablespoon of oil and 1 tablespoon of butter over medium-low heat. Once the butter melts, add 1 finely chopped onion, 1 rib of finely chopped celery, and ½ finely chopped green bell pepper. Sauté for about 7-8 minutes until tender.
  2. Add 1 pound of ground chicken, breaking it apart with a wooden spoon. Cook for about 5 minutes, stirring occasionally, until the chicken is no longer pink.
  3. Sprinkle in 3 tablespoons of Cajun seasoning and 3 minced garlic cloves, stirring well. Cook for an additional minute without browning the garlic.
  4. Stir in ½ cup of crushed tomatoes, ½ tablespoon of brown sugar, and ½ teaspoon of hot sauce if desired. Pour in ½ cup of heavy cream, mix well, and reduce the heat.
  5. Allow the mixture to simmer for about 15 minutes, stirring occasionally. Taste and season with ¼ teaspoon of salt as needed.
  6. Toast 4 burger rolls in the oven or on a toaster until golden brown.
  7. Serve by spooning the Cajun chicken mixture onto the toasted rolls. Add optional toppings as desired.
