- Preheat your oven to 200°F (93°C).
- In a clean, dry mixing bowl, add egg whites. Beat on medium speed until foamy. Add cream of tartar and increase speed to high, whipping until soft peaks form.
- Gradually add the granulated sugar, one tablespoon at a time, while mixing. Beat until thick and glossy stiff peaks form.
- Gently fold in the vanilla extract with a spatula.
- On a parchment-lined baking sheet, drop spoonfuls of meringue mixture to create ghost shapes.
- Bake for 1.5 to 2 hours in the preheated oven. They should feel dry to the touch.
- Turn off the oven and leave meringues inside for an additional hour to cool.
