  • 2 cups New Potatoes Cut into quarters
  • 1 cup Peas Fresh or frozen
  • 1 bunch Asparagus Trimmed and cut into pieces
  • 1/4 cup Fresh Mint Finely chopped
For the Dressing
  • 1/4 cup Olive Oil Extra virgin preferred
  • 1 Juice Lemon Freshly squeezed
  • 1 tsp Salt Adjust to taste
  • 1 tsp Pepper Freshly cracked

Method
 

Preparation Steps
  1. Wash the new potatoes, asparagus, and fresh mint under cool running water. Cut the potatoes into quarters.
  2. In a large pot, boil water and cook the quartered new potatoes for about 20 minutes until fork-tender, then drain.
  3. Blanch the asparagus in boiling water for 3-4 minutes, then transfer to ice water. Drain after a few minutes.
  4. In a large mixing bowl, combine the cooled potatoes, blanched asparagus, and peas, stirring in the chopped mint.
  5. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl to make the dressing.
  6. Drizzle the dressing over the salad and gently toss to coat all ingredients.
  7. Serve immediately or let sit for about 10 minutes to meld flavors. Garnish with additional mint leaves.
