- Peel and dice the sweet potatoes into small cubes. Cook in boiling water for about 10 minutes until tender but not mushy. Drain and set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced chicken sausage and cook for about 5 minutes, stirring until browned and slightly crispy.
- Lower heat and add sweet potatoes, broccoli, and zucchini. Stir and cook for an additional 5 minutes until the vegetables are softened and fragrant.
- Add soy sauce, garlic powder, black pepper, and smoked paprika. Stir well and cook for another 3-4 minutes to meld flavors.
- Continue cooking for 2-3 more minutes, stirring occasionally to ensure even heating and vibrant colors.
- Transfer to serving plates and optionally garnish with grated parmesan cheese or nutritional yeast. Serve immediately.
