  • 2 cups Broccoli Can use green beans or asparagus instead.
For Cooking
  • 1 tablespoon Olive Oil Coconut oil can be used for a different flavor.
  • 2 tablespoons Soy Sauce/Coconut Aminos Tamari for gluten-free, low-sodium soy for lower salt.
  • 1 teaspoon Garlic Powder Fresh garlic can be used for a more robust flavor.
  • 1 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika Cayenne pepper can be added for heat.

Method
 

Instructions
  1. Peel and dice the sweet potatoes into small cubes. Cook in boiling water for about 10 minutes until tender but not mushy. Drain and set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced chicken sausage and cook for about 5 minutes, stirring until browned and slightly crispy.
  3. Lower heat and add sweet potatoes, broccoli, and zucchini. Stir and cook for an additional 5 minutes until the vegetables are softened and fragrant.
  4. Add soy sauce, garlic powder, black pepper, and smoked paprika. Stir well and cook for another 3-4 minutes to meld flavors.
  5. Continue cooking for 2-3 more minutes, stirring occasionally to ensure even heating and vibrant colors.
  6. Transfer to serving plates and optionally garnish with grated parmesan cheese or nutritional yeast. Serve immediately.
