Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and lightly grease a roasting dish with olive oil.
  2. Rinse cherry tomatoes and remove stems. Place tomatoes, smashed garlic, rosemary, thyme, and olive oil in the roasting dish. Season with salt and toss to coat.
  3. Roast the mixture for 30-40 minutes until tomatoes burst open and turn caramelized.
  4. Remove from oven, discard herb sprigs, and set aside roasted garlic. Add lemon zest and juice to the tomato mixture.
  5. Boil salted water in a large pot and cook pasta according to package instructions until al dente, about 8-10 minutes.
  6. Drain the cooked pasta, return it to the pot, and combine with the roasted cherry tomato mixture. Adjust seasoning as necessary.
  7. Serve in bowls, garnished with torn basil leaves and optionally sprinkle with vegan parmesan.
