Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C). Prepare four 6-inch cake pans by lining the bottoms with parchment paper and lightly greasing the sides.
  2. Beat the egg whites until foamy. Add lemon juice and slowly incorporate sugar until stiff peaks form over 5-7 minutes.
  3. In another bowl, whisk egg yolks, milk, oil, and vanilla. Sift in flour and matcha powder, mixing gently. Fold in meringue in thirds.
  4. Divide the batter evenly among pans and bake for 15–20 minutes or until a toothpick comes out clean.
  5. Make whipped cream by beating cream, powdered sugar, matcha powder, and vanilla until medium-stiff peaks form.
  6. Assemble the cake by layering whipped cream and mashed strawberries between cooled cake layers, finishing with whipped cream on top.
  7. Apply a crumb coat and chill for 20 minutes. After chilling, cover the cake with more whipped cream and decorate with strawberries.
