Step-by-Step Instructions
- In a medium saucepan, melt 1/2 cup of butter over medium heat. Stir continuously for about 3-4 minutes until fully liquefied.
 - Add 2 cups of sugar, 1/2 cup of milk, and 1/4 cup of lemon juice to the melted butter. Stir well and bring to a gentle boil for around 2 minutes.
 - Let the mixture simmer for 1 minute while stirring occasionally. Then, remove from heat.
 - Incorporate 3 1/2 cups of rolled oats, 1 tablespoon of optional lemon zest, 1 teaspoon of vanilla extract, and a pinch of salt. Mix thoroughly.
 - Using a spoon or small scoop, drop spoonfuls onto wax or parchment paper, spacing them evenly.
 - Allow cookies to set at room temperature for about 30 minutes, or refrigerate for about 15 minutes.
 - Once firm, serve and enjoy your cookies, or store leftovers in an airtight container.
