Preparation Steps
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together 1 cup of softened unsalted butter with 1/4 cup of powdered sugar until light and fluffy, about 3-4 minutes.
- Gradually sift in 1/4 cup of cornstarch and 1 1/2 cups of all-purpose flour, add lemon zest, lemon juice, vanilla extract, and a pinch of salt. Mix on low speed until a soft dough forms.
- Roll dough into 1-inch balls, place on the prepared baking sheet, and flatten slightly.
- Bake for 10-12 minutes until the edges are just golden. The centers should remain soft.
- Allow cooling on the baking sheet for a few minutes before transferring to a wire rack. Dust generously with powdered sugar after cooling.
