For the Broccoli
  • 4 cups Broccoli florets Fresh or frozen.
For the Sauce
  • 3 tablespoons Extra virgin olive oil For sautéing.
  • 4 cloves Garlic Minced.
  • 1/2 teaspoon Red pepper flakes Adjust for spice preference.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
For the Finish
  • 1 cup Parmesan cheese Grated, added in two stages.

Method
 

Cooking Steps
  1. Fill a large pot with water, adding salt, and bring to a boil.
  2. Add broccoli and blanch for 2-3 minutes until bright green, then set aside and reserve ½ cup of cooking water.
  3. In a skillet, heat olive oil and sauté garlic and red pepper flakes for about 30 seconds.
  4. Add blanched broccoli and reserved water, then season with salt and pepper; cook for about 10 minutes.
  5. Cook pasta in the boiling water until al dente, typically 8-10 minutes, then drain.
  6. Combine drained pasta with the broccoli mixture, and add Parmesan, tossing over low heat.
  7. Adjust sauce consistency with reserved cooking water if needed, and serve garnished with extra Parmesan.
