Step-by-Step Instructions
  1. Start by rinsing 1 cup of rice under cold water until the water runs clear. In a medium saucepan, heat 1 tablespoon of olive oil and add minced garlic, sautéing for 1-2 minutes. Add the rinsed rice, followed by 2 cups of chicken stock and a pinch of salt. Bring it to a boil, cover and reduce to low heat, simmering for 15-20 minutes. Fluff with a fork and stir in lime juice and cilantro.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add diced onions and minced garlic, cooking for 2-3 minutes until translucent. Add 1 pound of ground turkey, searing it for 1-2 minutes. Continue cooking until the turkey is no longer pink. Season with salt and pepper, then stir in taco seasoning and 1/4 cup of chicken stock, simmering for 5 minutes.
  3. To create your Ground Turkey Rice Bowl, place a portion of the cooked rice at the bottom of a bowl. Layer on the seasoned ground turkey, then top with customizable toppings such as guacamole, pico de gallo, canned sweet corn, black beans, shredded cheese, and fresh cilantro. Serve with lime wedges.
