Ingredients
  

For the Filling
  • 1 can Black Beans drained and rinsed
  • 1 can Refried Beans
  • 1 Red Bell Pepper diced
  • 1 can Green Chilis
  • 1 cup Corn frozen or fresh
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Cumin optional
  • 1 tsp Smoked Paprika or regular
  • 1 tsp Kosher Salt to taste
For the Assembly
  • 2 cups Enchilada Sauce store-bought or homemade
  • 8 pieces Tortillas corn or flour, halved
  • 1 cup Cheese shredded, can substitute with vegan cheese
Optional Toppings
  • 1 each Avocado sliced
  • 0.5 cup Cilantro chopped
  • 1 each Lime Wedges
  • 0.5 cup Sour Cream or Greek Yogurt optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine black beans, refried beans, diced red bell pepper, green chilis, corn, garlic powder, onion powder, cumin, smoked paprika, and salt.
  3. Spoon a thin layer of enchilada sauce into the bottom of a 9 x 13-inch baking dish.
  4. Place four halved tortillas over the sauced base, then spread ½ cup of enchilada sauce over them. Add half of the filling mixture and sprinkle ½ cup of shredded cheese on top.
  5. Repeat layering with remaining tortillas, sauce, filling mixture, and cheese.
  6. Top with a final layer of tortillas, sauce, and sprinkle remaining cheese.
  7. Cover with aluminum foil and bake for 25 minutes. Then remove foil and bake uncovered for 5 more minutes, or broil for 1 minute.
  8. Let the casserole rest for about 5 minutes before serving, then garnish with cilantro.
