- Preheat your oven to 350°F (175°C) and coat a 2 to 3-quart casserole dish with cooking spray.
- In a skillet, cook the diced bacon over medium heat for 4-5 minutes until crispy. Transfer to a paper towel-lined plate.
- Using the bacon drippings, sauté the finely chopped onion for 5-6 minutes until soft and translucent.
- In the baking dish, mix baked beans, sautéed onion, and 3/4 of the crispy bacon. Add ketchup, brown sugar, mustard, molasses, Worcestershire sauce, and vinegar if using.
- Sprinkle the remaining bacon on top and bake uncovered for 50-60 minutes until bubbly and caramelized.
- Let it rest for about 10 minutes before serving.
