Step-by-Step Instructions for Dark Chocolate Peppermint Slice
  1. Line an 18 x 27 cm slice tin with baking paper, covering the base and edges.
  2. Melt dark chocolate, condensed milk, and butter in a microwave at medium power in 30-second intervals until smooth.
  3. Add crushed arrowroot biscuits and rice bubbles to the melted mixture, stir thoroughly, and press into the lined tin.
  4. Melt remaining dark chocolate with vegetable oil in a clean bowl; stir until glossy, then mix in peppermint essence.
  5. Pour the topping evenly over the base, smooth it out, and chill in the refrigerator for at least 2 hours.
  6. Once set, lift out using baking paper, place on a cutting board, and slice into squares.
