Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C) and prepare a 9-inch springform pan.
  2. In a mixing bowl, combine graham cracker crumbs, ground pistachios, granulated sugar, and melted butter. Press into the bottom of the pan and bake for 8 minutes.
  3. Beat cream cheese and granulated sugar together until smooth. Gradually add eggs one at a time, mixing on low. Then add sour cream, pudding mix, and vanilla.
  4. Pour the filling over the cooled crust and smooth the top. Bake for 45 to 50 minutes until slightly jiggly.
  5. Turn off the oven, crack the door open, and let the cheesecake cool for 1 hour.
  6. Chill the cheesecake in the refrigerator for at least 4 hours, preferably overnight.
  7. Spread cherry pie filling over the chilled cheesecake and sprinkle with chopped pistachios before serving.
