Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8 inch baking pan with non-stick spray or parchment paper.
  2. In a large mixing bowl, combine the old-fashioned oats, Dutch processed cocoa powder, baking powder, and salt. Whisk until well blended.
  3. Add the milk of choice, maple syrup, eggs, melted coconut oil, and vanilla extract to the dry ingredients. Stir until you have a smooth batter.
  4. Gently fold in the mini chocolate chips and transfer the mixture to the prepared baking pan. Sprinkle extra chocolate chips on top.
  5. Bake for 30 to 40 minutes, until the edges are firm and a toothpick inserted comes out mostly clean.
