- Preheat your oven to 350°F (175°C) and prepare an 8x8 inch baking pan with non-stick spray or parchment paper.
- In a large mixing bowl, combine the old-fashioned oats, Dutch processed cocoa powder, baking powder, and salt. Whisk until well blended.
- Add the milk of choice, maple syrup, eggs, melted coconut oil, and vanilla extract to the dry ingredients. Stir until you have a smooth batter.
- Gently fold in the mini chocolate chips and transfer the mixture to the prepared baking pan. Sprinkle extra chocolate chips on top.
- Bake for 30 to 40 minutes, until the edges are firm and a toothpick inserted comes out mostly clean.
