  • 1 block Firm or Extra-Firm Tofu
  • 1/2 cup Cashew Nuts Can be substituted with other nuts or seeds
  • 1 cup Panko Can use regular breadcrumbs as a substitute
  • 1 teaspoon Salt Adjust according to preference
  • 1/2 teaspoon Pepper Use to taste
For Coating
  • 1/2 cup Wheat Flour All-purpose or rice flour for gluten-free
  • 2 tablespoons Oil High smoke point oil like vegetable or canola

Preparation Steps
  1. Start by removing excess moisture from your tofu block. Wrap the tofu in a clean kitchen towel and place a heavy object on top for about 15-20 minutes.
  2. In a food processor, combine the pressed tofu, cashew nuts, panko, salt, and pepper. Pulse until smooth but not runny.
  3. Take portions of the mixture and roll them into nugget shapes, about 1-2 inches long, and lightly coat with flour.
  4. Heat oil in a medium frying pan over medium heat. Fry the nuggets for 2-3 minutes on each side until golden brown.
  5. Transfer fried nuggets to a paper towel-lined plate to drain excess oil and cool slightly before serving.
