Method
 

Instructions
  1. Preheat your oven to 420°F (220°C). Line a baking tray with parchment paper.
  2. In a medium bowl, combine melted unsalted butter, olive oil, and white wine. Add salt, pepper, lemon juice, minced garlic, and chopped parsley. Mix until well incorporated.
  3. Pat the whole chicken dry with paper towels. Rub half of the seasoning mixture all over and inside the cavity of the chicken.
  4. Stuff the chicken cavity with lemon halves, garlic bulb, and herb sprigs.
  5. Place the seasoned chicken breast-side up in your baking dish and roast for about 1 hour and 20 minutes, basting at 30 minutes and 1 hour.
  6. Check the doneness with a thermometer; it should read 165°F (74°C).
  7. Let the chicken rest for about 10 minutes before carving and serving.
