  • 2 large russet potatoes
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley chopped
  • 1 lemon cut into wedges

Method
 

  1. Preheat your oven to 425°F.
  2. Wash and peel the potatoes, then cut them into thin strips, about 1/4 inch thick.
  3. In a large bowl, toss the potato strips with olive oil, garlic powder, oregano, salt, and black pepper until evenly coated.
  4. Spread the fries in a single layer on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 30-35 minutes, flipping halfway through, until golden brown and crispy.
  6. Remove the fries from the oven and immediately sprinkle with crumbled feta cheese and chopped parsley.
  7. Serve hot with lemon wedges on the side for squeezing over the fries.
