Ingredients

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup breadcrumbs preferably panko for extra crunch
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon olive oil

Method

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
  3. In another bowl, whisk the eggs and olive oil together until well combined.
  4. Dip each piece of chicken into the egg mixture, allowing any excess to drip off, then coat it in the breadcrumb mixture, pressing gently to adhere.
  5. Place the coated chicken nuggets on the prepared baking sheet in a single layer, making sure they are not touching.
  6. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the nuggets are golden brown and crispy.
  7. For extra crispiness, you can broil the nuggets for an additional 1-2 minutes at the end of baking, but watch them closely to prevent burning.
  8. Let the nuggets cool for a few minutes before serving.
