  1. Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat for about 1-2 minutes.
  2. Add 4 ounces of chopped sun-dried tomatoes, 16 ounces of uncooked potato gnocchi, 5 minced garlic cloves, and 1 teaspoon of Italian seasoning to the skillet. Cook for 2-3 minutes.
  3. Pour in ½ cup of chicken broth and 1 cup of heavy cream, stirring continuously until thickened, bringing it to a gentle boil in about 3-4 minutes.
  4. Cover and reduce heat to low, simmer for about 5 minutes to fully cook the gnocchi.
  5. Remove cover, add 5 ounces of fresh spinach and 7 ounces of chopped artichoke hearts. Cook on medium heat for 5 minutes.
  6. Taste the sauce and adjust seasoning with ¼ teaspoon of salt and red pepper flakes as desired. Serve warm.
