Step-by-Step Instructions
- Begin by chopping the boneless, skinless chicken breasts into bite-sized pieces, ensuring even cooking. Gather all your ingredients—store-bought gnocchi, cream cheese, chicken broth, spinach, shredded cheddar, and optional bacon bits.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken pieces and sauté for 5-7 minutes, stirring occasionally, until golden brown and cooked through.
- Reduce the heat to medium and add the cream cheese along with 1 cup of chicken broth to the skillet. Stir vigorously to combine until the cream cheese is fully melted.
- Incorporate the store-bought gnocchi and fresh spinach into the sauce, cover the skillet and let it simmer for 5-7 minutes, until the gnocchi are tender and spinach has wilted.
- Once the gnocchi are cooked, stir in 1 cup of shredded cheddar cheese and optional bacon bits. Cook for another 2-3 minutes until the cheese melts into the sauce.
- Spoon the creamy gnocchi mixture into bowls and garnish with additional shredded cheese or fresh herbs if desired. Serve hot.
