Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground chicken, egg, panko breadcrumbs, minced garlic, diced jalapeño, chopped fresh herbs, turmeric, yellow curry powder, cumin, and kosher salt. Mix gently until just combined and form into meatballs.
  3. Bake the meatballs for 15 to 20 minutes until golden brown and fully cooked.
  4. In a skillet, heat coconut oil over medium heat, add minced garlic and vegetables, sauté for 3-4 minutes. Stir in rice, coconut milk, and water, cover, and simmer for 15-20 minutes.
  5. In a separate bowl, whisk together additional coconut milk, tahini, minced garlic, maple syrup, and remaining spices until smooth.
  6. To serve, layer the rice and vegetables in bowls, top with meatballs, drizzle with curry sauce, and garnish with fresh herbs.
