Combine Ingredients
- In a medium bowl, gather your rolled oats, coconut milk, Greek yogurt, shredded unsweetened coconut, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Mix thoroughly with a whisk or spoon until all ingredients are well incorporated.
Add Bananas
- If you’re opting for a fruity twist, gently fold in sliced bananas now. Using a spatula, carefully combine them into the mixture without smashing the fruit.
Portion & Refrigerate
- Divide the oat mixture evenly into two airtight jars or containers. Seal them tightly and refrigerate for at least four hours or ideally overnight.
Stir and Serve
- When ready to enjoy, take the jars out of the refrigerator. Stir to combine any settled ingredients and serve. Top with whipped cream and additional shredded coconut if desired.
