Method
 

Combine Ingredients
  1. In a medium bowl, gather your rolled oats, coconut milk, Greek yogurt, shredded unsweetened coconut, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Mix thoroughly with a whisk or spoon until all ingredients are well incorporated.
Add Bananas
  1. If you’re opting for a fruity twist, gently fold in sliced bananas now. Using a spatula, carefully combine them into the mixture without smashing the fruit.
Portion & Refrigerate
  1. Divide the oat mixture evenly into two airtight jars or containers. Seal them tightly and refrigerate for at least four hours or ideally overnight.
Stir and Serve
  1. When ready to enjoy, take the jars out of the refrigerator. Stir to combine any settled ingredients and serve. Top with whipped cream and additional shredded coconut if desired.
