Ingredients
  

  • 1 lb chicken breast diced
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion thinly sliced
  • 1/2 cup tzatziki sauce
  • Fresh parsley for garnish

Method
 

  1. In a bowl, combine olive oil, garlic powder, onion powder, paprika, oregano, salt, and pepper. Add the diced chicken and marinate for at least 30 minutes.
  2. Heat a skillet over medium heat and cook the marinated chicken until fully cooked, about 7-10 minutes.
  3. In serving bowls, layer the cooked rice or quinoa as the base.
  4. Top the rice with the cooked chicken, cherry tomatoes, cucumber, and red onion.
  5. Drizzle tzatziki sauce over the top and garnish with fresh parsley.
