Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 tablespoon olive oil
  • 1 medium onion sliced
  • 1 medium bell pepper sliced (any color)
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 10 ounces diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 cup tortilla chips crushed
  • Fresh cilantro for garnish optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper, cooking until they are soft, about 5-7 minutes.
  3. Stir in the shredded chicken, black beans, diced tomatoes, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Cook for an additional 3-5 minutes until everything is heated through.
  4. In a greased 9x13 inch baking dish, layer half of the chicken mixture, followed by half of the shredded cheese. Sprinkle half of the crushed tortilla chips on top. Repeat the layers with the remaining chicken mixture, cheese, and tortilla chips.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  6. Remove from the oven and let it cool for 5 minutes. Garnish with fresh cilantro if desired before serving.
