  • 1 avocado diced
  • ½ cup walnuts toasted
  • ¼ cup feta cheese crumbled (optional)
  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey

Method
 

  1. In a large bowl, combine the chopped kale and a pinch of salt. Massage the kale for about 2-3 minutes until it becomes tender and slightly wilted.
  2. Add the cooked farro, fresh cherries, diced avocado, and toasted walnuts to the bowl with the kale.
  3. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper until well combined.
  4. Pour the dressing over the salad and toss gently to combine all the ingredients.
  5. If using, sprinkle the crumbled feta cheese on top before serving.
  6. Serve immediately or let the salad sit for about 10 minutes to allow the flavors to meld.
