  • 1 pound Ground Beef can substitute with ground turkey or chicken
  • 2 tablespoons Olive Oil vegetable oil or butter can be used
  • 1 medium Onion any onion type is great
  • 2 cloves Garlic fresh cloves are best, garlic powder can work
  • 4 cups Potatoes Yukon gold or red potatoes can be substituted
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Black Pepper white pepper is a milder substitute
  • 1 teaspoon Paprika smoked paprika can be used for extra flavor
  • 1 teaspoon Dried Oregano fresh oregano or Italian seasoning are good alternatives
  • 1 cup Shredded Cheddar Cheese mozzarella or spicy pepper jack are great alternatives
  • 1 cup Beef Broth vegetable broth can be used for a vegetarian version
  • 1/4 cup Fresh Parsley any fresh herb can be used as a garnish

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 pound of ground beef, breaking it apart with a wooden spoon. Cook for about 5-7 minutes or until browned.
  2. In the same skillet, add 1 chopped onion and 2 minced garlic cloves to the remaining fat. Sauté over medium heat for about 3-4 minutes until the onion turns soft and translucent.
  3. Stir in 4 cups of diced potatoes, 1 teaspoon of salt, ½ teaspoon of black pepper, 1 teaspoon of paprika, and 1 teaspoon of dried oregano. Mix well to coat the potatoes with spices.
  4. Pour in 1 cup of beef broth and bring to a gentle simmer. Cover with a lid and cook for 20-25 minutes until the potatoes are softened.
  5. Once the potatoes are tender, remove the lid and sprinkle 1 cup of shredded cheddar cheese evenly over the top. Cover again and allow the cheese to melt for about 2-3 minutes.
  6. Remove from heat and sprinkle freshly chopped parsley over the cheesy surface. Serve hot.
