For the Garnish
  • 1 tablespoon Fresh parsley Can substitute with dried parsley

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a greased 9x13-inch baking dish.
  2. In a large mixing bowl, toss chicken with half of the salt, pepper, garlic powder, and a quarter of the onion powder.
  3. Heat olive oil in a skillet over medium-high heat, add chicken and cook until golden brown, about 3-4 minutes.
  4. In the same skillet, sauté cubed potatoes until slightly softened and golden, about 5-7 minutes.
  5. In a saucepan, melt butter, whisk in flour, then gradually add milk, cooking until the sauce thickens.
  6. Combine browned chicken and sautéed potatoes in the baking dish and pour the cheese sauce over them.
  7. Sprinkle remaining mozzarella cheese on top and bake for 20-25 minutes until golden and bubbly.
  8. Let the dish rest for 5 minutes before serving, garnished with fresh parsley.
