Step-by-Step Instructions
- Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish with cooking spray or butter.
- In a large skillet, heat olive oil over medium-high heat. Add cubed chicken breasts, sprinkle half of your seasonings over them, and sauté for 3-4 minutes until browned.
- In the same skillet, add chopped potatoes and sauté for 5-7 minutes until slightly softened and turning golden.
- In a medium saucepan, melt butter over medium heat and whisk in flour to create a roux. Gradually whisk in milk until thickened, about 4-5 minutes. Stir in remaining seasonings and both cheeses until melted and creamy.
- Layer the sautéed chicken and potatoes in the greased baking dish, pour the cheese sauce over, and top with remaining mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes until bubbly and golden on top.
- Allow the dish to rest for about 5 minutes before serving.

Notes
Ensure potato chunks are uniform in size for even cooking. Use the broiler for a crispy cheese top, and season chicken and cheese sauce separately for enhanced flavor.
