Equipment

  • 9x13-inch baking dish
  • large skillet
  • Medium saucepan

Method

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish with cooking spray or butter.
  2. In a large skillet, heat olive oil over medium-high heat. Add cubed chicken breasts, sprinkle half of your seasonings over them, and sauté for 3-4 minutes until browned.
  3. In the same skillet, add chopped potatoes and sauté for 5-7 minutes until slightly softened and turning golden.
  4. In a medium saucepan, melt butter over medium heat and whisk in flour to create a roux. Gradually whisk in milk until thickened, about 4-5 minutes. Stir in remaining seasonings and both cheeses until melted and creamy.
  5. Layer the sautéed chicken and potatoes in the greased baking dish, pour the cheese sauce over, and top with remaining mozzarella cheese.
  6. Bake in the preheated oven for 20-25 minutes until bubbly and golden on top.
  7. Allow the dish to rest for about 5 minutes before serving.
