Method
 

Instructions for Cheddar Cornmeal Biscuits
  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, cornmeal, baking powder, baking soda, and salt.
  3. Cut cold butter into small cubes and work into the dry mixture until it resembles coarse crumbs.
  4. Gently fold in shredded cheddar cheese and chopped chives.
  5. Pour in the buttermilk and stir until a shaggy dough forms.
  6. Transfer to a floured surface and knead gently, then roll out to a thickness of ¾ to 1 inch.
  7. Cut out biscuits and place them on the prepared baking sheet.
  8. Bake for about 15 minutes until golden brown.
  9. Cool on the baking sheet for 5 minutes before transferring to a platter.
