Ingredients

For the Salad
  • 14 oz Cabbage shredded; feel free to mix green and red cabbage for color
  • 2 Apples sliced; Gala, Pink Lady, or Honeycrisp work well
  • cup Walnuts or Pecans toasted and chopped; try hazelnuts or almonds for a fun twist
  • ¼ cup Parmesan Cheese shaved or crumbled; shaved is preferred
For the Dressing
  • 3 tablespoons Extra Virgin Olive Oil dressing base
  • 2 tablespoons Apple Cider Vinegar adds perfect acidity
  • 2 teaspoons Honey balances the dressing
  • 1 teaspoon Dijon Mustard adds depth
  • ½ teaspoon Salt enhances the flavors
  • Freshly Cracked Black Pepper to taste

Equipment

  • Mixing Bowl
  • Skillet
  • Jar

Method

Step-by-Step Instructions
  1. Remove any outer leaves from the cabbage. Cut the medium head in half and shred it into thin slices.
  2. Quarter the apples, remove the cores, and slice into ¼-inch pieces. Add to the bowl with the cabbage.
  3. Toast walnuts in a skillet over medium heat for about 5 minutes until golden. Chop and mix into the salad.
  4. Combine dressing ingredients in a jar, shake vigorously until well-emulsified.
  5. Add half of the parmesan cheese to the bowl, pour dressing over, and toss gently. Let sit for 10 minutes.
  6. Garnish with reserved walnuts and remaining parmesan. Serve at room temperature.
